Grilled Chicken is a popular, satisfying, and tasty meal.  Nowadays, it’s one of the few things that everyone will want a bite of.  In fact, grilled chicken is more of a category than it is a dish (as there are endless ways to fix them).  And in this category, we’re going to take a look at four ways to fix them.

First of all, I would like to thank Ms. Brandi Bidot, the author of these recipes.  The four recipes we are going to take a look at today are specifically marinades for boneless chicken breasts.  Each one is easy to make and delicious to eat.  And the flavor profile for each marinade gives the chicken a unique taste that your party will love!  So let’s take a look at these recipes:

Nobody wants to eat a dry, tasteless piece of grilled chicken. Whip up one or all of these marinades and impress everyone you serve. Ideally, you want to give your chicken plenty of time to develop the flavors that they are marinating in. We suggest you prep and marinate the night before or at least several hours before you fire up the grill.

Zesty honey lime marinade recipe

Yields 4 servings

Ingredients:

  • 4 limes, zested and juiced
  • 1/3 cup peanut oil or canola oil
  • 2 tablespoons soy sauce
  • 1/4 cup honey
  • 1/2 teaspoon crushed red pepper flakes
  • 3 cloves garlic, very finely minced
  • Salt and pepper to taste
  • 4 chicken breasts

Directions:

  1. In a bowl mix the lime juice and zest, oil, soy sauce, honey, pepper, garlic and season with salt and pepper. Mix well.
  2. Add the chicken breasts to a large zip-closed bag and pour the marinade over top. Close the top and toss the chicken. Marinate overnight or until ready to grill.

Simple balsamic marinade recipe

Yields 4 servings

Ingredients:

  • 1/2 cup balsamic vinegar
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup honey
  • 1/4 cup light brown sugar, packed
  • 1/4 cup low-sodium soy sauce
  • 3 – 4 garlic cloves, finely minced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 chicken breasts

Directions:

  1. In a bowl, mix the balsamic vinegar, olive oil, honey, brown sugar, soy sauce, garlic, onion powder and season with salt and pepper.
  2. Add the chicken breasts to a large zip-closed bag and pour the marinade over top. Close the top and toss the chicken. Marinate overnight or until ready to grill.

Fresh chimichurri style marinade recipe

Yields 4 servings

Ingredients:

  • 1 to 1-1/2 cups extra-virgin olive oil
  • 1 cup red wine vinegar
  • 4 large limes, juiced and zested
  • 4 fresh jalapeños, seeded and finely chopped
  • 8 cloves garlic, very finely minced or crushed
  • 2 cups flat-leaf parsley leaves
  • 1 cup fresh oregano
  • 2 teaspoons red pepper flakes
  • 1 tablespoon agave nectar
  • Salt and pepper to taste
  • 4 chicken breasts

Directions:

  1. In a bowl combine all of the ingredients except for the chicken, mixing very well.
  2. Add the chicken breasts to a large zip-closed bag and pour the marinade over top. Close the top and toss the chicken. Marinate overnight or until ready to grill.

Dijon and white wine marinade

Yields 4 servings

Ingredients:

  • 8 ounce jar Dijon-style mustard (1 cup)
  • 1/4 cup extra-virgin olive oil
  • 2-3 tablespoons white wine vinegar (can also substitute red wine vinegar)
  • 2 tablespoons pure maple syrup
  • 2 cloves garlic, finely minced
  • 1 teaspoon fresh rosemary, finely chopped
  • 1-1/2 teaspoons fresh oregano, finely chopped
  • 1 teaspoon fresh thyme, finely chopped
  • Salt and pepper to taste
  • 4 chicken breasts

Directions:

  1. In a bowl combine all of the ingredients except for the chicken, mixing very well.
  2. Add the chicken breasts to a large zip-closed bag and pour the marinade over top. Close the top and toss the chicken. Marinate overnight or until ready to grill.

Citrus and garlic mojo marinade recipe

Yields 4 servings

Ingredients:

  • 6 cloves garlic, minced
  • 4 large sweet oranges, juiced
  • Zest of 1 whole orange
  • 2 limes, juiced and zested
  • 2 lemons, juiced and zested
  • 2 tablespoons agave nectar
  • 1 tablespoon garlic powder
  • 1 tablespoon oregano
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 4 chicken breasts

Directions:

  1. In a bowl combine all of the ingredients except for the , very well.

  2. Add the chicken breasts to a large zip-closed bag and pour the marinade over top. Close the top and toss the chicken. Marinate overnight or until ready to grill.
